EAT IN SEASON

Seasonal Recipe

Butternut Squash & Roasted Shallot Soup
Gluten Free, Dairy Free and delicious!

Preheat oven to 375 degrees

Cut one large butternut squash in half, lengthwise and remove seeds.  Rub inside of squash with olive oil, sprinkle with salt and pepper.  Place in baking dish, cut side down and roast in over for 45-60 minutes, until tender when pierced with tip of knife.

Peel 3 medium sized shallots and toss with 1 Tbsp olive oil. Wrap shallots in foil and place in same baking dish to roast with squash.

Remove squash from oven and cool slightly.  Inside flesh should still be warm.  This will make it simple to puree.  Scoop out flesh and place inside food processor with blade attachment.  Add roasted shallots to the bowl as well.  Puree mixture until smooth.  This is a slow process, so be patient.  You want a smooth texture to the soup.  Remove squash mixture and place in sauce pan with approximately 2-3 cups of hot water.  Slowly bring the soup up to a simmer.  If the puree is too thick, add more water.  Add salt, pepper to taste, then add 1 Tsp Ground Nutmeg to the soup and stir well.  Serve right away, or store in open container to assure the soup cools properly and enjoy later.
